tr\u00e8s \u00e9quilibrant pour les 3 constitutions <\/span><i><span style=\"font-weight: 400;\">(vata, pitta et kapha)<\/span><\/i><span style=\"font-weight: 400;\">.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">La particularit\u00e9 de la m\u00e9decine ayurv\u00e9dique est la notion des 6 saveurs : doux (sucr\u00e9), sal\u00e9, amer, astringent, piquant, acide.\u00a0<\/span><span style=\"font-weight: 400;\">Cette recette est donc tridoshique car elle contient les 6 saveurs en proportions sp\u00e9cifiques pour \u00e9quilibrer les 3 doshas.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">En Inde, le kitchari est notamment utilis\u00e9 apr\u00e8s une cure de purification appel\u00e9e Panchakarma, pour gu\u00e9rir certaines maladies, et lors de convalescence.\u00a0<\/span><span style=\"font-weight: 400;\">Il apporte tous les nutriments n\u00e9cessaires (prot\u00e9ines, glucides, lipides et fibres) afin de redonner de la vitalit\u00e9 aux tissus et \u00e0 l&rsquo;organisme lorsque ce dernier a \u00e9t\u00e9 malade.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Le mot Kitchari signifie \u00ab m\u00e9lange \u00bb en sanskrit.\u00a0<\/span><span style=\"font-weight: 400;\">C&rsquo;est un m\u00e9lange de deux graines : le riz basmati et le haricot mungo.\u00a0<\/span><span style=\"font-weight: 400;\">Il est possible d\u2019utiliser le haricot mungo (le fameux petit haricot vert) ou bien le haricot mung dal (ce m\u00eame haricot mungo, mais d\u00e9pellicul\u00e9 et cass\u00e9 en
